Instructions
Step 1
1. In a blender, mix together all of the ingredients until combined and smooth.

2. Preheat a griddle or non-stick skillet to medium-high heat and spray with cooking spray.

3. Using a tablespoon, scoop the pancake mixture onto the pan to form medium circles (use about 2 heaping tablespoons for each pancake).
Step 4
4. Cook for 4-5 minutes on the first side or until edges start to harden and bubbles start to form on the surface. Add 3-4 blueberries on top of each pancake before flipping.
Step 5
5. Flip and cook for an additional 1-2 minutes on the other side until golden brown.
Step 6
6. Serve warm with your favorite toppings like sliced bananas, nut butter, or maple syrup.
