Ingredients
2 servings
tofu
crispy
16 ozsuper-firm tofu
or extra-firm, pressed if needed
4 Tbspcornstarch
2 Tbspnutritional yeast
½ tspsalt
½ tspblack pepper
3 Tbspoil
avocado or olive
sauce
creamy
5cloves garlic
minced
½ cupsun-dried tomatoes
chopped
½ tsporegano
½ tspchili flakes
optional
¾ cupfull-fat coconut milk
or 1 cup soy or oat milk
½ cupwater
1 Tbsptomato paste
salt
to taste
pepper
to taste
2 cupsbaby spinach
4basil leaves
vegan parmesan
optional
2 ¾ cuppasta
Instructions
Step 1
1. Cook the pasta first
Step 2
Boil salted water.
Step 3
Cook pasta until al dente.
Step 4
Save ½ cup pasta water, then drain.(Set aside while you cook the tofu.)
Step 5
2. Crispy tofu
Step 6
Pat tofu dry and cut into bite-size triangles or cubes.
Step 7
Mix cornstarch, nutritional yeast, salt, and pepper in a bowl.
Step 8
Toss tofu until coated.
Step 9
Heat oil in a large pan over medium-high heat.
Step 10
Pan-fry tofu 3–4 minutes per side until golden and crispy.
Step 11
Remove tofu from the pan and set aside.
Step 12
3. Make the sauce (same pan, easy)
Step 13
Lower heat to medium-low. Add a little more oil if the pan is dry.
Step 14
Add garlic, cook 1 minute until fragrant.
Step 15
Stir in sun-dried tomatoes, oregano, chili flakes, salt, and pepper.
Step 16
Add coconut milk, water, and tomato paste. Stir until smooth.
Step 17
Simmer gently 4–5 minutes until creamy.
Step 18
Stir in spinach until wilted.
Step 19
4. Bring it together
Step 20
Add tofu back to the pan.
Step 21
Add cooked pasta and a splash of reserved pasta water.
Step 22
Toss gently until everything is coated and glossy.
Step 23
Taste and adjust salt, pepper, or chili flakes.
Step 24
Finish with basil and vegan parmesan if using.
