Instructions
Step 1
Add water and broth to a medium pan. If using dehydrated mushrooms, simmer them for about 10 minutes to soften them.
Step 2
Grate in fresh ginger and add collagen, salt, pepper, green onion, rice vinegar, sesame oil, and coconut aminos. Simmer another minute.
Step 3
Add noodles and crack egg into center of the noodles. Boil for 2-3 minutes or until egg appears done.
Step 4
Remove from heat. In a small bowl, scoop some of the broth and dissolve the miso paste. Then add it to the pot and stir.
Step 5
Top with seaweed snacks and serve.
