Ingredients

tomato bean and lentil chilli mix
Spicy, either packet or homemade
garlic granules
black pepper
egg
fresh coriander
cottage cheese
smoked paprika
Chipotle spice
cherry tomato
red onion
mushroom
sourdough bread
Instructions
Step 1
Toast a slice of bread. While it is toasting cut up your desired amount of veg (usually 1 mushroom, 1-2 tomatoes, a few chopped rings of red onion) and mix with desired quantity of bean and lentil mix with cottage cheese (I usually do 50/50 or 2/1 ratio). Season to preference with spices.
Step 2
Set up pan of boiling water.
Step 3
Spread the bean cheese mixture on the toast and place in air fryer at around 170 for 5 mins while you poach the egg.
Step 4
When egg is cooked, take out the toast from the air fryer, put on plate and add egg on top. Garnish with fresh coriander and some black pepper.
