3 cupscorn
cooked
0.5red bell pepper
chopped
1jalapeño
small, chopped
¼ cupred onion
chopped
¼ cupcilantro
chopped
¼ cupcojita cheese
Cilantro Lime Rice
1 cupjasmine rice
uncooked
1 Tbspextra virgin olive oil
½ cupcilantro
chopped
2 Tbsplime juice
½ tspgarlic powder
½ tspsalt
¼ tspblack pepper

Instructions
Step 1
Prep chicken: Cut into cubes. Coat in 1 tbsp olive oil & seasonings. Set Aside.
Step 2
Make Rice: Cook according to package instructions. Mix in cilantro, lime, olive oil, garlic powder, & salt & pepper
Step 3
Prep Dressing: mix all dressing ingredients
Step 4
Street Corn: chop jalapeño, red pepper, onion, & cilantro. Add everything to a bowl with the corn. Top with cojita cheese & half the dressing
Step 5
Cook Chicken: heat on a skillet on medium-high heat. Add olive oil until hot. Add chicken & cook 3-4 mins on one side. Flip & cook an additional 3-4 mins until cooked to 165 degrees.
Step 6
Assemble: Add romaine, rice, chicken, & corn to a bowl. Top with more dressing & lime.
