0.5bell pepper

1can jalapeno sauce
4dried guajillo peppers
2dried pasilla chiles
aka chile negro
4garlic cloves
4 lbsbeef stew meat
2 tblspavocado oil
4 tblspflour
2 tspcumin
2 tspgarlic powder
2 tspgarlic powder
1 tsporegano
1 tblspblack pepper
1 tblspkosher salt
1 tspchipotle powder
2 cupswater
1.5 tblspbeef bouillon
1 tblsproasted garlic
1can diced green chiles
2 tblspcorn starch
1 tspmsg
Instructions
Step 1
In 3 qt saucepan, add seeded guajillo and pasilla peppers and add about 3 cups water and bring to a boil
Step 2
Boil for about 2 minutes and turn off burner, don’t discard liquid
Step 3
Add peppers to blender with 3 cloves of garlic, 1 tsp salt and 2 cups of the pepper boiling liquid and blend until very smooth
Step 4
In a small bowl add flour, cumin, garlic powder, black pepper, oregano, salt, chipotle powder and mix together
Step 5
In large mixing bowl add beef stew meat and seasoning mix and toss beef until coated.
Step 6
In 7 qt pot add 2 tblsp avocado oil and heat then add bell pepper and onion and sauté until soft
Step 7
Add seasoned beef and brown beef
Step 8
Once beef is browned, add diced tomato and can of diced green chilies and stir to incorporate
Step 9
Pour Chile’s in blender in pot thru a fairly fine mesh to catch any particulates and add better than bouillon beef bouillon and better than bouillon roasted garlic bouillon and MSG
Step 10
Simmer on low covered until beef is tender. Taste for salt and add if needed
Step 11
In a small vessel, add 2 tblsp of corn starch and 2 tblsp water and stir to make slurry then add to pot to thicken
