Preheat your oven to 375 degrees Fahrenheit

1. Make the flax gel: In a small cup, mix the 2 tablespoons of ground flaxseed with 3 tablespoons of water. Let it sit for 5 minutes until it becomes thick and gelatinous.

2. Mash the beans: In a medium bowl, mash the black beans thoroughly with a fork or potato masher, leaving just a few small bean pieces for texture.

3. Mix the dough: Add the flax gel, almond flour, soy sauce, maple syrup, and all of your spices to the mashed beans. Stir and fold until completely combined.

4. Rest the mixture: Let the mixture sit undisturbed for 10 minutes. This step is critical; it allows the almond flour and flax to fully absorb the liquids and bond together.

5. Shape the dough: Scoop about 2 tablespoons of the rested mixture. Squeeze it tightly in your palm first to compress the dough, then gently roll it between your hands into a 3-inch log shape. Smooth the edges. You should get about 14-16 sausage links

6. Bake: Place on a parchment-lined baking sheet. Bake at 375°F (190°C) for 12 minutes, gently roll the links onto a new side, and bake for another 10 to 12 minutes until firm and browned.
