JP's Spicy Mushroom Toasts
When you can’t think what to serve as a first course, try this simple dish—it is always satisfying. Just be sure to make the toasts at the last minute so they are crunchy, not soggy.
To simplify the preparation, use presliced prewashed fresh mushrooms, available at most supermarkets.

Instructions
Step 1
Heat the olive oil in a large skillet.
Step 2
When the oil is hot, add the mushrooms and sauté over high heat for about 5 minutes, until the liquid released by the mushrooms has evaporated and there is just a little moisture remaining around them.
Step 3
Add the salt, pepper, salsa, and sour cream and bring to a boil.
Step 4
Remove from the heat. Stir in the parsley and keep warm.
Step 5
Toast the bread and cut the slices into quarters.
Step 6
Arrange the quarters on individual plates, forming 1 whole slice per serving. Top with the mushroom mixture and serve.
