Garlic Basil Chicken with Roasted Sweet Potatoes

Garlic Basil Chicken Ingredients
2 lbsboneless skinless chicken breasts
2 Tbspolive oil
4cloves garlic
minced
1 tspitalian seasoning
1 tspkosher salt
½ tspblack pepper
¼ tspcrushed red pepper flakes

¼ cupchicken broth
0.5juice of lemon
1zest of lemon
¼ cupparmesan cheese
freshly grated
¼ cupfresh basil
chopped

Instructions
Step 1
Preheat the oven to 425F. Line two baking sheets with parchment paper.
Step 2
Toss 2 cubed sweet potatoes with 1 tbsp olive oil, 1 tsp garlic powder, 1 tsp Italian seasoning, ½ tsp smoked paprika, ½ tsp kosher salt, and ¼ tsp black pepper. Spread onto one baking sheet and roast for 30–35 minutes, stirring halfway through.
Step 3
Toss 1 head of broccoli florets with 1 tbsp olive oil, ½ tsp garlic powder, ¼ tsp kosher salt, and ¼ tsp black pepper. During the last 15 minutes of the sweet potatoes' cooking time, place the broccoli on the second baking sheet and roast until tender with lightly browned edges.
Step 4
While the vegetables roast, pat 2 lbs chicken breasts dry and season both sides with 1 tsp Italian seasoning, 1 tsp kosher salt, ½ tsp black pepper, and ¼ tsp crushed red pepper flakes, if using.
Step 5
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side, or until golden brown and the internal temperature reaches 165°F. Transfer to a plate and tent loosely with foil.
Step 6
Reduce the heat to medium. Add 4 minced garlic cloves to the skillet and cook for 30 seconds, stirring constantly. Pour in ¼ cup chicken broth, juice of ½ lemon, and zest of 1 lemon, scraping up any browned bits from the bottom of the pan.
Step 7
Stir in 1 tbsp butter, ¼ cup Parmesan cheese, and ¼ cup chopped fresh basil until the sauce is smooth. Return the chicken to the skillet and spoon the sauce over the top for 2–3 minutes.
Step 8
Serve the garlic basil chicken with the roasted sweet potatoes and broccoli. Spoon any remaining pan sauce over the chicken before serving.
Step 9

Mince the garlic and chop the basil in advance.
Season the chicken up to 24 hours before cooking.
The entire meal reheats well for lunches throughout the week.
