Ingredients
4 servings
1 tablespoonvegetable oil
2red bell pepper
medium, cut into 2-inch strips
1 lbpork tenderloin
cut into thin strips
1onion
medium, cut lengthwise in half, then cut into thin wedges
1 teaspoongarlic-pepper blend
2 cupteriyaki sauce
1 x 8 ozpineapple tidbits in juice
can, drained, 1/3 cup juice reserved
2 ½ cupsrice
hot
Instructions
Step 1
In 12-inch nonstick skillet, heat oil over medium-high heat.
Step 2
Cook bell peppers in oil 3 to 4 minutes, stirring frequently, until crisp-tender.
Step 3
Remove from skillet; set aside.
Step 4
In same skillet, cook pork, onion and garlic-pepper blend over medium-high heat 7 to 9 minutes, stirring occasionally, until pork is no longer pink in center.
Step 5
Stir in teriyaki sauce and reserved pineapple juice; cook about 2 minutes, stirring occasionally, until hot.
Step 6
Using a spoon, top rice with pork mixture.
Step 7
Top with pineapple slices and bell pepper.
Step 8
Spoon teriyaki-pineapple sauce from skillet into small bowls to pour over plates.
