Instructions

Step 1
In a frying pan, heat up half the olive oil and sear the venison. Reserve with the juice.
Step 2
In the same pan, warm up the remaining olive oil and add the lemongrass and onion, combine and cook at low/medium heat for 3 min.
Step 3
Add the ginger and garlic, cook for 2 min. Meanwhile mix the curry powder with boiling water to form a paste.
Step 4
Transfer the paste into the pan and combine, add boiling water if needed and cook for 2 min
Step 5
Add the meat and juice to the curry paste, add the tamarind paste. Pour in a glass of water and combine everything.
Step 6
Add the diced potatoes to the meat and curry. Put the lid on and cook in low heat for 10 min. Stir occasionally and add water if required.
Step 7
Add the dried chili, tomatoes cut in quarters and the coconut milk
Step 8
Bring it to simmer without the lid on for 15 min and reduce the sauce.
