Instructions
Preheat oven to 425
Step 1
Drain, rinse, then dry the chickpeas (want them dry so that they will actually crisp up a bit in oven)

In large bowl mix chickpeas, cumin, salt and pepper and toss to coat
Step 3
Add 1/4 cup of the oil and toss to coat
Step 4
Spread chickpeas out on foil lined pan and cook for 20 to 25 minutes
After chickpeas finish cooking
Step 5
Heat oil over medium heat
Step 6
Saute shallot and garlic for 2 minutes until soft
Step 7
Add chickpeas and mix well with onion/garlic
Step 8
Stir in lemon juice, sherry and marinara sauce
Step 9
Heat until chickpeas are well coated and sauce is hot
Step 10
Serve over rice
