Easy Veggie Soba Noodles

This is another easy and healthy recipe that is great when you need a quick lunch or dinner. This recipe also works well for meal prep and can be prepared in advanced and eaten throughout the week.
Soba noodles are made from buckwheat and are rich in zinc, magnesium, and B vitamins which help your body process food as energy. They are also a high-quality plant protein. Feel free to use any veggies that you like in this dish, get creative and put your spin on it!

Ingredients
4 servings
1 packagesoba noodles
1yellow bell pepper
sliced
8 ozshiitake mushrooms
sliced thin
1 bunchcurly kale
3green onions
thinly sliced and separate green and white parts
¼ cuplow-sodium soy sauce
2cloves of garlic
minced
1 Tbspavocado oil
¼ cupfresh herbs
I used basil and mint
Crushed red pepper
for serving

Instructions
Step 1
Bring a small pot of water to a boil and cook your soba noodles for around 10 minutes before straining and rinsing under cold water
Step 2
In a separate pan, heat oil and sauté bell pepper, mushrooms, and white part of onion until softened; about 5 minutes
Step 3
Add in garlic and cook until fragrant then add in kale and stir until softened
Step 4
Stir in noodles and soy sauce until heated through
Step 5
Remove from heat and add remaining ingredients and serve
