Step 1
Make the rice.
Step 2
Heat the oil in a large skillet over medium heat. After a minute, add the curry paste and garlic. Stir constantly for about 1 minute.
Step 3
Add the zucchini, coconut milk, broth, lentils, salt to taste, cumin, garam masala and curry powder. Bring the mixture to a simmer, then cover and cook, stirring occasionally for 10 minutes.
Step 4
Add the peas and serrano pepper if using. Cook for 5 more minutes.
Step 5
When the curry is done, squeeze 2-3 lime wedges over the mixture and stir.
Step 6
To assemble: Add the rice to four containers and the lentil curry on top. Garnish with remaining lime wedges.
