½ cupyellow onion
diced
½ cupgreen bell peppers
diced
1 tspcumin
1 tspchili powder
8 ozchicken breast
raw, cook and shredded 6 oz
½ cupblack beans
rinsed and drained
½ cupsalsa
4 wedgescheese
lite
8corn tortillas

Instructions
Step 1
Cook the chicken, and shred
Step 2
Preheat oven to 375 degrees F.
Step 3
Heat a large frying pan over medium heat. Spray with cooking spray and add onions and bell peppers. Saute 3-5 minutes, then add cumin and chili powder. Cook another minute then remove from heat.
Step 4
Add the shredded, cooked chicken, black beans, salsa and Laughin Cow Cheese. Mix Well.
Step 5
Wrap tortillas in foil and place in oven 5-10 minutes to soften. Scoop 1/3 cup of mixture into each tortilla. Roll up carefully and place seam down in a greased 9x13 baking dish.
Step 6
Top with enchilada sauce and mozzarella cheese. Bake at 375 degrees for 20-25 minutes.
Step 7
Serve 2 enchiladas warm, topped with 1 oz guacamole, green onions, cilantro, and lime juice.
