Instructions

Step 1
Heat 1 tbsp olive oil in a skillet. Add the chopped onion, chopped kale, and arugula and sauté for 2-3 minutes. Set aside.
Step 2
Crack each egg into the pan and fry for 2-3 minutes or until cooked to your liking.
Step 3
Add the sautéed kale and arugula to a serving plate and top with the cooked eggs and sliced avocado. Season with salt and pepper, and a sprinkle of hemp seeds.
Step 4
Serve with a slice of gluten free toast.
