Ingredients

2 tablespoonsolive oil
divided
450 grsausage
cut into little pieces
1red onion
medium, diced
1red bell pepper
seeds removed and diced
3 clovesgarlic
minced
¼ teaspoondried oregano
¼ teaspoonfennel seed
300gpenne pasta
uncooked
600mlvegetable broth
or chicken
50gfresh mozzarella cheese
chopped
30gParmesan cheese
3 tablespoonsfresh basil
chopped, for garnish
salt
pepper
1crushed tomato
canned, mixed
Instructions
Step 1
Heat a large skillet or pot over medium heat and add the olive oil. Add the garlic, onion, red peppper and sausage slices. Cook, stirring often, until the onion and peppers are tender and the sausage is cooked through, about 5-7 minutes.
Step 2
Add oregano and fennel seed. Salt and pepper.
Step 3
Add penne pasta, crushed tomatoes and broth. Stir until combined. Cover with a lid and cook for 8-10 minutes, stirring occasionally, or until pasta is al dente.
Step 4
Remove lid, stir and add the fresh mozzarella cheese. Stir and cook until cheese is melted. Top with Parmesan cheese and fresh basil. Serve warm.
