Ingredients
2 servings
1 lbfirm tofu
high protein, cubed
1yellow onion
diced
3garlic cloves
peeled and minced
2 tablespoonsfresh ginger
finely minced
2carrots
diced
1 headbutter lettuce
iceberg works too, leaves separated
cilantro
2 tablespoonscoconut oil
Sauce
Instructions
Step 1
In a large saute pan add 1 tablespoon coconut oil over medium-high heat. Add the chopped diced onions and carrots to pan. Cook for 5 minutes.
Step 2
Then add garlic and fresh ginger. Cook for an additional 3 minutes.
Step 3
Remove mixture from pan and place in bowl. Set aside.
Step 4
Using the same pan, bring it back up to temperature over medium-high heat. Add 1 tablespoon coconut oil and let oil get hot. Should start to bubble.
Step 5
Now add cubes tofu and allow it cook on one side for 3 minutes to get crispy and then flip for another 3 minutes on the other side.
Step 6
In the pan with tofu add back in your bowl of sauteed veggies. Cook together for 3 minutes.
Step 7
In a small bowl combine all sauce ingredients and whisk.
Step 8
Arrange lettuce cups on a plate and fill with 2 tablespoons of tofu mixture and drizzle with sauce.
