Step 1
Heat a deep skillet and spray it with a little olive oil (you can skip oil for lower calories)
Step 2
Dice one medium onion and add it to the mushrooms. Fry stirring every now and then until the onion becomes slightly transparent
Step 3
Dice one medium eggplant, two sticks of celery and about 300 grams of broccoli. When the onions are ready, add the veggies. Add a teaspoon of curry powder, a lot of garlic powder, one tiny chili or half a teaspoon of pepper, salt and ginger(either finely grated or powder) to taste. Stir vigorously and let fry until soft and slightly brown
Step 4
fry veggies until soft and brownish(5-7 minutes) and stir from time to time. meanwhile, dice one large or two medium tomatoes. once the veggies are soft, add the tomatoes and half a spoon of sugar and fry for another 2 minutes, stirring.
Step 5
Add hot water to the pan so that it almost covers the veggies. Stir vigorously and leave to stew. You don't need to lower the heat, just let the water evaporate and stir everything now and then. This will take about 10-15 minutes
Step 6
Once the water evaporates, turn off the heat and add a generous portion of fresh spinach and some chopped parsley. Mix everything. Your stew is ready. Can be served both hot and cold
