Crispy Beef & Broccoli Stir-Fry

Step 1
Heat 1 tbsp of oil in wok on high heat. Add the beef mince and stir-fry for 6-8 mins until dark and crisp. Meanwhile, add noodles to pan with boiling water and boil for 5-7 mins. Drain but reserve 5 tbsp of the water
Step 2
Transfer crispy beef to a bowl. Heat remaining 1 tbsp oil in the wok, add the broccoli and onion and fry for 6-7 mins. Mix the soy, vinegar, miso and reserved noodle water in a bowl.
Step 3
Add garlic, ginger and most of the chilli to the wok and fry for 1 min. Tip the noodles back into the wok along with the sauce and beef. Toss well to coat the noodles and broccoli. Cook for further 30 secs until sauce bubbling and thickened. Divide between 4 bowls and scatter remaining chilli.
