Instructions
Step 1
Preheat oven to 200 degrees Celsius.
Step 2
Heat a pan over medium-high heat. Add lamb mince, onion, garlic and oregano. Cook for 3 minutes.
Step 3
Add carrot and zucchini and heat for a further 2 minutes. Stir through the passata.
Step 4
In another pan, cook the potato and eggplant slices in batches for 2-3 minutes each side or until golden and tender. Set aside.
Step 5
In a saucepan, mix the milk with flour until smooth. Cook, stirring over low heat until thickened. Remove from heat and stir in the ricotta and nutmeg.
Step 6
In a large baking dish, layer the bottom with half the sliced potato followed by half the sliced eggplant. Top with mince mixture. Layer the remaining potato slices, then eggplant slices. Pour over the milk and ricotta mixture.
Step 7
Bake in the oven for 40-45 minutes. Allow to cook and divide into 4 serves. Store in the fridge.
