Ingredients

2cloves garlic
minced
1onion
small, diced
2 tablespoonsolive oil
2sweet potatoes
small, peeled and chopped
2carrots
medium, sliced
0.5red bell pepper
chopped, optional
1 x 15 ouncecan black beans
15 ouncecan tomato sauce
½ cupwater
or vegetable broth
1 tablespoonchili powder
1 teaspooncumin
½ teaspooncayenne
or to taste
½ teaspoongarlic powder
½ teaspoonsalt
¼ teaspoonblack pepper
Instructions
Step 1
Gather ingredients. In a Dutch oven or soup pot, saute the garlic and onions in olive oil for a minute or two.
Step 2
Add chopped sweet potatoes, sliced carrots, and optional bell pepper to pan and cook until onions are soft, about 5 - 6 minutes.
Step 3
Reduce heat to medium low and add all of the remaining ingredients, stirring to combine well.
Step 4
Allow chili to simmer, partially covered and stirring occasionally over medium low heat for about 20 to 25 minutes, until the sweet potatoes, carrots, and bell peppers are soft.
Step 5
Serve in a bowl with your favorite chili toppings.
