Instructions
For the Mlyntsi
Step 1
Whisk together eggs, salt, sugar and 150ml of milk, add flour and mix until well combined, then add the rest of the milk, mix, and add oil. Beat until smooth (make sure there are no lumps, you can strain the batter if you see any) and let it rest for 20-30minutes. Heat a non-stick pan over high heat. Pour a small amount of batter into the pan and tilt the pan from side
to side to spread the batter out to the edges. Cook 1 to 2 minutes or until the bottom is lightly browned then turn. Cook for another 20 seconds and transfer to a plate.
For the filling
Step 2
Heat olive oil in a large skillet and add chopped onion. Cook until softened and add chopped mushrooms, salt, pepper, garlic granules and oregano. Fry until golden brown, then transfer to the bowl and stir in cream cheese, grated cheese and chopped coriander. Mix well until combined and set aside.
For the white sauce
Step 3
Melt butter in the saucepan, add flour and stir continuously until paste forms. This is called a roux. Add milk to the roux gradually, stirring as you go to avoid any lumps. Add garlic cloves with a sprig of rosemary and bring it to a boil, stirring continuously, until the sauce thickens. Discard the garlic with rosemary, add black pepper and salt and mix. Set aside.
Preheat oven to 200C
Step 4
Place a layer of filling along the lower third of a pancake, leaving a 1-inch border on the edges. Fold in the sides and roll-up. Repeat with remaining Mlyntsi and filling.
Step 5
Spread half of the white sauce over the bottom of a rectangular or square ovenproof dish. Assemble Mlyntsi into the baking dish and pour the remaining sauce on top.
Step 6
Sprinkle with cheese and bake for 20-25 minutes or until golden brown.
