Instructions

Step 1
Combine 1/4 cup oil, lemon juice, honey, paprika, cumin, 1/2 teaspoon salt, 1/2 teaspoon pepper. Reserve 3 tablespoons of mix for serving. add chickpea, onion and mint and toss. set aside
Step 2
Put flour in shallow dish. Pound chicken pieces to be uniform. Pat dry and season with salt and pepper. Dredge each breast in flour
Step 3
Heat 2 tbls oil in 12 inch skillet on medium high heat until smoking. Place chicken in skillet and cook till golden brown, around 10 minutes. Transfer to serving platter and tent w aluminum foil. Let rest for 5 minutes. Drizzle rest of dressing over chicken and serve with salad
