Quick butter cookies w/ nuts and raisins

Nothing super fancy, but an easy way to add some extra nutrients to what would normally just be tea time served with butter cookies.

Step 1
Add flour, sugar, butter, egg and vanilla (optional) to your food processor or thermomix.
Step 2
Transfer the mixture into a bowl or board, and knead until it all forms a nice lump.
Step 3
Line a baking tray with parchment paper or a silicon matt. Start separating the dough into pieces about a heaped teaspoon size and make tiny balls. Flatten them on the baking tray with a fork.
Alternatively, form the dough into a tube and cut slices of the dough (like I did in the picture). It's less pretty, but it saves time!
Step 4
On a chopping board chop up the nuts and raisins. Alternatively, put them in the food processor and blitz a few times. The size and amount is up to you, but I enjoy having some texture to bite!
If you didn't chop them together, do mix them up in a bowl.
Step 5
With your hands or a spoon, place some nuts on top of each cookie and press them down gently. It's important to press down, as these cookies are crispier rather than gooey they won't hold the nuts unless you press them down.
Step 6
Bake on a pre-heated oven at 160⁰C/320⁰F for 20 minutes.
