Instructions
Step 1
Cube the tofu and lightly coat it with oil. Half bake at 400. Lightly coat with coconut aminos and finish baking.
Step 2
Cube the potatoes and lightly coat them with olive oil and salt. Bake at 400 until desired crispness is reached.
Step 3
Prepare quinoa or rice according to normal instructions.
Step 4
Saute salted and Italian spiced chickpeas in olive oil until lightly browned.
Step 5
Finely chop the greens and add to a saute pan with a bit of water. Cook until very wilted. Add quinoa and/or rice to reheat, if needed. The sauce can also be added at this step.
Step 6
Mix all ingredients together in a bowl and enjoy!
