Vegan Lentil Sweet Potato Chili Bowl

This recipe is perfect for new moms. It's high in protein for tissue repair, fiber for digestive health, and sweet potatoes to help support your milk supply. This was easy to prepare - throw everything in the crockpot and you have plenty of meals that you can eat throughout the week or freeze for easy meal prep!

Ingredients

Sweet Potato Chili
1red onion
diced
5garlic cloves
minced
1 Tbspchili powder
2 tspground cumin
2 tspdried oregano
1 tspsalt
1 Tbspchili powder
½ tspblack pepper
2 Tbsptomato paste
1 Tbspmaple syrup
2sweet potatoes
medium, peeled and cubed
1 x 15 ozcans black beans
rinsed and drained
1 x 28 ozcans kidney beans
rinsed and drained
1 x 28 ozcan fire-roasted diced tomatoes
with the juice
2 cupslentils
uncooked, rinsed and drained
3 cupsbone broth
80gcollagen powder
1 Tbsplime juice

Instructions
Step 1
Add all ingredients to crockpot except lime juice and toppings. Stir to combine, cover, and set on high for 3.5 hours.
Step 2
Remove the lid and stir in the lime juice after 3.5 hours. To thicken chili, take out 2 cups and blend in a blender. Recombine into the crockpot, then let the chili thicken for another 15 minutes with the lid off.
Step 3
Serve each bowl with sour cream, avocado, cheese, green onions, cilantro, and limes.
