Ingredients
3 servings
3 nestsdried noodles
1 Tbspcoconut oil
3skinless chicken breasts
thinly sliced
1 tspgarlic paste
1 tspginger paste
100gbaby corn
cut into quarters
1carrot
peeled and cut into ribbons with a peeler
100gmange tout
cut into
1red pepper
deseeded and thinly sliced
0.5red onion
thinly sliced
coriander
roughly chopped, to serve
6 Tbsppeanut butter

2 tspmarmite
1juice of lime
1 tspginger paste
1 tspgarlic paste
1 Tbspsesame oil
1 Tbsphoney
60mlwater
Instructions
Step 1
Cook the noodles in a medium saucepan of boiling water according to the packet instructions. Bring a kettle of water to the boil. Drain the noodles in a colander over the sink, then pour the kettleful of hot water over the noodles to remove any starch and stop them from sticking together.
Step 2
Whisk together the peanut sauce ingredients in a small saucepan.
Step 3
Heat a wok over a high heat and when it starts to smoke add the coconut oil along with the chicken, garlic and ginger paste. Cook until the chicken has lost most of its pinkness, then throw in the vegetables. Continue to cook, moving everything around in the pan for 1-2 minutes until the chicken is fully cooked.
Step 4
Gently heat through the peanut sauce in the pan until just hot.
Step 5
Toss the cooked noodles through the stir-fried chicken and vegetables. Using tongs, plate the noodles and spoon over the peanut sauce. Sprinkle each serving with a little chopped coriander and serve.
