SPINACH PANEER CURRY 🍛

SPINACH PANEER CURRY 🍛 🌟 With it feeling rather wintery today and R catching a cold, I whipped up one of our favourite currys loaded with iron (& vitamin C to aid absorption). It’s so easy and super delicious! 🌟 Ingredients ▫️1 large bag of fresh spinach (frozen spinach works too but will shrink so you need more of it) ▫️1 can of chopped tomatoes ▫️1 block of paneer cheese (found in most supermarkets) ▫️1 onion ▫️1 garlic clove ▫️1 cm fresh ginger Spices - garam masala, ground cumin, paprika, turmeric, black pepper (1 tsp - adjust to taste) 🌟 Recipe 1️⃣Roughly chop onion and sauté in olive oil for 10 mins 2️⃣Add chopped garlic & ginger 3️⃣Add spinach & cook until wilted (approx 5-10mins) 4️⃣Blend the mixture & add back to the pan 5️⃣Add chopped tomatoes & spices (& optional blob of butter) 6️⃣Add paneer & simmer until cooked (usually 5-10mins) 🌟 SWIPE to see different stages of weaning: 1) 👶🏽 12month+ - cubed (practising utensils) 2) 👶🏽 6-12month - crumbled (spoon-feeding or early stages) 3) 👶🏽 6-12month - sticks (BLW perfect finger food) 💫 Served with basmati rice and cucumber rounds. Top curry with chopped coriander 🌿 ❄️ Store in fridge in airtight container for up to 2 days or batch cook and freeze up to 1 month ❓ What is your LO’s favourite curry?
