Instructions
Step 1
You need Frijoles de Olla to start. Set aside 4-5 cups of cooked Pinto beans with a little bit of liquid.
Step 2
In a hot pan add 1 Tbs of oil and your cooked beans. Stir as they sizzle for a bit.
Step 3
Turn the heat down to low then with an immersion blender mash them up to your desired texture. I like mine smooth.
Step 4
In a separate pan add a Tbs of oil and the chorizo. Chook through breaking up the chorizo as best as possible.
Step 5
Add your mashed up beans to the chorizo with a Tbs of salt and stir thoroughly.
Step 6
Fold in cheese and you're ready to go!
