Instructions
Crispy Rice Bun
Step 1
Wash sushi rice until the water runs clear (at least 5 times) and cook in a rice cooker.
Step 2
Combine rice vinegar, sugar, and salt. Once the rice is cooked, fluff it and season with rice vinegar mix.
Step 3
Place cooked rice in a cling film lined baking sheet (10" x 13" is perfect). Wrap in another layer of cling film and place another tray on top with some weights or heavy items to press it down. Refrigerate at least 2 hours to set.

Use a ring mold to cut 4 circles (4.5 in diameter) out of the pressed sushi rice.
Step 5
Heat oil to 365 F and fry rice buns until golden brown (~5 min). Season immediately with salt and drain on a paper towel lined tray.

Combine soy sauce, onion, korean pear, garlic, scallion, ginger, honey, mirin, water, sesame oil. black pepper, and chilli flake in a blender and blend until combined.

Kimchi Slaw
Step 7
Combine mayonnaise, thinly sliced green cabbage, rough chopped kimchi, 1 tbsp kimchi juice, thinly sliced scallion greens, and julienned korean pickled daikon (danmuji) in a bowl. Adjust seasoning to taste.

Combine mayonnaise, gochujang, and 2 tbsp of galbi marinade. Adjust seasoning to taste.

Burger Patty

Cut short rib into 1 inch chunks and grind in a meat grinder with a medium dye. Grind the meat again for an extremely tender consistency. (You can buy 75/25 ground beef to substitute).

Add 2 tbsp of galbi marinade into the ground short rib and mix well. Form 2 x 6 oz (175 g) patties, using a ring mold to match the shape of the crispy rice bun.

Heat a cast iron skillet over medium heat and add a splash of oil. Place a burger patty on the pan and season with salt and black pepper. Cook each side for about 2-3 min until nicely charred and your desired temperature is reached (I prefer medium).

Assemble burger with a crispy rice bun, gochujang mayo, kimchi slaw, some julienned raw onion, and the short rib burger patty. Enjoy the fruits of your labor!
