Ingredients
4 servings
800 gramscanned chickpeas
drained
3 ½ cupswater
¼ cupolive oil
3cloves garlic
grated
2 tablespoonsginger
grated
0.5onion
medium-sized, sliced thinly
2green chilies
slit
1 ½ teaspoonturmeric
1 tspchili powder
2 teaspoonsblack pepper
1 ½ tspcoriander powder
1 ½ tspgaram masala
1 tspAmchur powder
1black cardamom pod
salt
to taste
1 tspfive spice

Instructions
Step 1
Dry roast the whole spices until fragrant, then grind them into a fine powder using a coffee grinder or mortar and pestle.
Step 2
Sauté ginger, garlic in olive oil until fragrant, then add the onion and bird’s eye chilis.
Step 3
After the onion has turned translucent, add the red pepper flakes and spices. Fry for a few minutes until the oil starts to separate, then deglaze the pan with about ½ cup of water.
Step 4
Add your chickpeas and water. Cover and cook on medium high heat for 15-20 minutes.
Step 5
Turn off the heat and use a potato masher with a light hand to add variation in texture. Garnish with fresh herbs.
