Ingredients

2chicken breast
1 poundred potatoes
small
1 poundbrussels sprouts
½ cupred onions
3 tablespoonsavocado oil
3 tablespoonsbalsamic vinegar
3cloves garlic
2 tablespoonsolive oil
2 tablespoonshoney
1lemon
1 tablespoonsfresh parsley
1 tablespoonsrosemary
crushed
1 tablespoonsrubbed sage
1 tablespoonsgarlic powder
minced
Instructions
Step 1
Preheat oven to 425 degrees. Slice onions, cut potatoes in quarters and brussels sprouts in halves. Add avocado oil, onions and potatoes to large oven safe skillet then cook in oven until browned. Add brussels sprouts, mix and cook 10 minutes. Reduce oven heat to 300 degrees. Cut chicken in halves (like cutlets) season with seasoning and rub with minced garlic then add to skillet. Drizzle balsamic vinegar & olive oil over everything, cover and cook in oven for 30 minutes or until chicken cooked and vegetables are browned. Rest 10 minutes. Drizzle honey, lemon wedges and fresh parsley to complete.
