Instructions

Step 1
Lightly salt and grill/bake chicken at 180° for about 22 minutes until it's cooked through

When the chicken has 10 mins left to cook

Fry the dry ingredients on medium heat until the chilli and curry leaves look cooked

Add the spices and toast for around 30 seconds
Step 4
Add the tomatoes and coconut milk. Simmer to reduce tomatoes and make curry sauce
Step 5
Add potato starch in water to thicken sauce
Step 6
Dice the cooked chicken and add to the pan, along with lime juice, if needed
