Instructions

Step 1
Preheat oven to 425F.
Step 2
Add diced sweet potatoes to a baking sheet and mixed together with garlic powder and sea salt and bake for 30 minutes( tossing halfway through) or until slightly crispy.
Step 3
To a pot add in black beans, filtered water, cumin, oregano, sea salt and cayenne. Mix together and cover with a lid. Bring to a boil, then reduce to low for about 15-20 mins.
Step 4
For the dressing, add all dressing ingredients to a personal blender and blend until smooth.
Step 5
To a large bowl add in your lettuce, diced tomato, mango, bell pepper, red onion, cilantro and mix together. Add sweet potato and beans and top with dressing! Enjoy!
