Step 1
Sweat onions, garlic, and carrots until translucent. Add potato, diced tomatoes, vegetable stock, pearled barley, and Italian seasoning.

Bring to a boil, then simmer until barley is tender (at least 40 min).

Toward the end of the cooking process, add the lemon juice, green beans, and corn. Season to taste.
