Instructions
Step 1
Preheat large pot over medium heat. Once pot is hot, add oil and swirl to coat bottom.

Remove sausage from casings and add to pot. Break apart with spoon. Cook, stirring occasionally, until browned and crumbly, 6–8 mins.

Meanwhile, peel and mince garlic. Peel and small dice onion.
Step 4
Add garlic and onion to pot and cook, stirring frequently, until softened, 4–5 mins.
Step 5
Drain and rinse beans.
Step 6
Add beans, broth, and spices to pot. Cover and bring to simmer.
Step 7
Meanwhile, wash potatoes. Cut into quarters, then thinly slice into 1/8 in pieces. Add to pot.
Step 8
Wash and dry kale. Tear into bite-sized pieces. Add to pot.
Step 9
Let soup simmer, covered, until potatoes are fork-tender, 10–15 mins. Add cream and stir to combine.
Step 10
Divide soup between bowls and enjoy.
