Instructions
Step 1
Cut sweet potatoes (and optional carrots) into bite size chunks and roast on foil – 400 for about 20 mins.
Step 2
Cook ground meat in large frying pan.
Step 3
While cooking, stir and chop meat with spatula to crumble.
Step 4
Continue cooking for about 7 minutes or until the meat is brown and cooked through.
Step 5
Add the onion, garlic, chili powder, tumeric, brown sugar, salt, cumin, oregano, cayenne, and tabasco.
Step 6
Cook while stirring, until onion is translucent, about 5 minutes.
Step 7
Transfer to large pot. Add the sweet potato, red peppers, kidney beans, sugar, and beer.
Step 8
Stir well and bring to a boil.
Step 9
Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally.
Step 10
Top individual bowls with garnish
