Step 1
1. Prepare the sweet potato noodles by boiling for 8-10 minutes, drain in a colander and splash in a tablespoon sesame oil to prevent sticking (top tip: cut the noodles with scissors to make them easier to eat)

2. Mean while make the Japchae marinade by stirring together the gochuchang, mirin, soy, sesame oil and seeds in a small bowl.

3. Stir fry the mushrooms and onion in a tablespoon of oil for 6-7 minutes until coloured
Step 4
4. Add the choi sum and Chinese cabbage for another 3-4 minutes
Step 5
5. Stir in the marinade and sesame seeds and coat the vegetables then add the noodles
Step 6
6. Serve with kimchi on the side and some more sesame seeds
