Designed to make 12x 3" pancakes quickly (2 servings), and make efficient use of measuring spoons. Pretty tasty, too!
Pour ingredients into a blender (wet stuff first) or a 2-quart sized bowl. If bowl, use an egg beater to speed up mixing. Pour batter from a 1/4 cup-sized measuring cup (ladle is better!) into a greased cast iron square skillet on Med heat. Wait for the bubbles to permeate the cakes, then flip 'em. Grease pan with oil between sets, and they'll slide right off with the spatula if they're ready. Don't waste any batter and it should come right to 12 sandollar pancakes.
We serve with butter, yogurt, peanut butter, and maple syrup. Enjoy!
100% Whole Wheat version: +2 tsp flour, +1 tsp baking powder
