CK's Simple Fluffy Dairy-Free Half-Whole Pancakes

Designed to make twelve 3" pancakes quickly, and make efficient use of measuring spoons. Pretty tasty, too! Pour ingredients into a blender or 1 quart size bowl. If bowl, use an egg beater to speed up mixing, and pour batter from a 1/4 cup-sized measuring cup into a greased cast iron square skillet on Med heat. Wait for the bubbles to permeate the cakes, then flip 'em. Grease pan with coconut oil between sets, and they'll slide right off with the spatula if they're ready. Don't waste any batter and it should come right to 12 sandollar pancakes. We serve with butter, yogurt, peanut butter, and maple syrup. Enjoy! NOTE: If making with all whole wheat, use 2 tablespoons more and 1 more teaspoon of baking powder.
