Instructions
Step 1
Heat olive oil over medium heat in pan
Step 2
Add onion, garlic and bell pepper; sauté until fragrant, ~3 minutes
Step 3
Add tofu and roughly crumble with spatula to resemble scrambled egg texture
Step 4
Add spices and mix to coat tofu
Step 5
Add tbsp water, fold in spinach and cover for ~5 minutes
Step 6
Once wilted, remove lid and allow to cook ~5 more minutes, stirring regularly until all vegetables are cooked
