TAMARIND RICE Stir-Fried Rice with Tamarind & Crushed Peanuts
Also known as puliyodharai, this southern Indian favourite is plain rice flavoured with tamarind, dried red chillies, curry leaves and crushed peanuts. A pinch of jaggery to balance the flavours and this rice dish is a must on every thali. The strength of tamarind can vary, so reduce or increase the quantity based on how tangy or sharp your paste is. Tamarind rice needs a slight tang to it, and the rice soaks up the flavours well.

Ingredients
4 servings
2 Tbspvegetable oil
1 tspblack mustard seeds
asafoetida
2dried red chillies
mild
1 Tbsproasted peanuts
lightly crushed
¼ tspKashmiri chilli powder
or mild chilli powder
8curry leaves
3 tsptamarind paste
mixed with 3 tbsp water
2 tsplight soft brown sugar
or jaggery
350gbasmati rice
cooked and cooled
salt
to taste
Instructions
Step 1
Heat the oil over a medium heat. Add the mustard seeds, asafoetida, dried chillies and roasted peanuts and fry for 1 minute.
Step 2
Add the chilli powder, curry leaves, tamarind paste and sugar and stir well. Turn off the heat. Add the cooked rice, making sure you mix everything together well.
Step 3
Season to taste, and serve warm.
