Instructions

Step 1
Heat the oil in a 6-to 8-quart pot over medium heat.
Step 2
Add the ginger, mustard seeds, and cumin seeds; sauté until the seeds begin to pop.
Step 3
Add the mung beans, rice, carrots, turmeric, and coriander.
Step 4
Stir the mixture a bit so the spices evenly coat the rice and beans.
Step 5
Add the water and bring the stew to a boil, cover, and reduce the heat to low; simmer for about 45 minutes.
Step 6
Add the kale, peas, cilantro, and salt; gently stir.
Step 7
Turn off the heat, cover, and let stand for about 5 minutes.
Step 8
Add more salt and seasonings if necessary.
Step 9
Dollop chilled coconut milk onto individual portions before serving, if desired.
