Instructions

Step 1
Julienne carrots into matchsticks.
Step 2
Chop the onion and mince the garlic.
Step 3
Sauté and carrots and raisins in some oil for 2 minutes. Set aside.
Step 4
Sauté the onions until translucent. Add the garlic, cinnamon stick and bay leave. Sauté until aromatic.
Step 5
Add 1 tbsp of tomato paste, 1 tbsp of arabic masala, 1/8 tsp ground cardamon, 1 tsp ground cumin and 1 tsp ground coriander.
Step 6
Add the rice and mix well.
Step 7
Add the chicken broth and salt. Taste and add more salt if necessary.
Step 8
Bring to a boil and lower the heat to simmer. Simmer for 10 minutes until the rice absorbs all the broth. Add the carrots and raisins. Simmer for another 5 minutes. Turn off the heat. Leave the cover on for another 5 minutes. Fluff the rice.
