These Oven "Grilled" Chicken Kebabs are reminiscent of those summer days with firing up the grill and enjoying kebabs. However, when you don't have a grill but still have a taste for some delicious kebabs, try this recipe.

1 PoundChicken Breast
or Chicken Thighs, cut into Chunks
1 cuplow sodium soy sauce
¼ cuppineapple juice
1 teaspoonginger powder
1 tablespoonminced garlic
¼ cupbrown sugar
1 teaspoonblack pepper
¼ cupwater
2 TeaspoonsLiquid Smoke
optional
1red bell pepper
cut into chunks
1green bell pepper
cut into chunks
1Yellow Bell Pepper
cut into chunks
1red onion
cut into chunks
2 tablespoonsolive oil
1 teaspoonkosher salt
Instructions
Step 1
For Marinade, in a large bowl add soy sauce, pineapple juice, water, minced garlic, brown sugar, ginger powder and mix well. Optional, you can add in liquid smoke for a smokey flavor that is reminiscent of these being cooked on a grill.
Step 2
Clean and pat dry chicken. Cut chicken into chunk size pieces. Add chicken into the marinade bowl and fully submerge in marinade and refrigerate for at least 2 hours.
Step 3
Cut red bell pepper, green bell pepper, yellow bell pepper, and red onion into chunk size pieces. Add to a separate bowl and lightly coat bell peppers and onions with olive oil or avocado oil and sprinkle with salt.
Step 4
To assemble kebabs you can use a metal or wood skewer. If using wood skewers I recommend soaking in water for 30 minutes before using to help prevent from burning. Wood skewers may still slightly burn which is ok. To ensure it does not catch fire, keep an eye on it while in the oven.
Step 5
Preheat the oven to Broil.
Step 6
Assemble kebabs to your preference. Line a sheet pan with foil and place an oven rack on top. Lightly coat the oven rack with non-stick cooking spray. Place kebabs on top of the oven rack. Place pan at least 6-inches away from broiler and broil for 5-7 minutes each side, then an additional 2-3 minutes each side to obtain desired char. This recipe should make about 6 kebabs.
