Instructions
Step 1
Cook lentils in 4 cups unsalted water until tender, about 20 minutes.
Step 2
Heat olive oil in a large pot. Add ginger, garlic, and tomato paste. Cook for about a minute or two.
Step 3
Add vegetable broth, drained lentils, pumpkin, salt, red pepper, and black pepper. Bring up to heat for 2 to 3 minutes.
Step 4
Add curry paste, coconut milk, and greens. Cook for about 5 minutes. Add lemon juice, cook another couple of minutes.
