Instructions
Make the fish marinade
Step 1
Blend a handful of cilantro (stems too) with the jalapeño and lime. Pour over fish and season with salt in a baking tray. Bake at 350 for about 15 minutes or until the fish is opaque.
Prep the corn salad
Step 2
Remove husk from corn and boil in salted water until bright yellow in color. Shave corn off the cob.
Step 3
Sauté poblano peppers over high heat. Add to corn.
Step 4
Finely chop red onion and add. Season with salt and lime juice to taste.
Assemble your bowl
Step 5
Serve fish, mango salsa, and corn salad over cauliflower rice and lettuce.
Step 6
Top with cilantro, sour cream, and a slice of lime.
