Instructions
Step 1
Place olive oil in a large pot or dutch oven, over medium heat.
Step 2
Add the onion and cook for about 3minutes until tender. Add garlic and cook for 3 minutes.
Step 3
Add the bacon and keep cooking until the fat has rendered.
Step 4
Add the amaranth leaves (or kale), parsley, and cook, stirring frequently, until greens are wilted and tender.
Step 5
Add 2 cups of stock to start (you can always add more later) and bring to a boil.
Step 6
Lower the heat and simmer for 8minutes. Transfer to a blender and puree until smooth.
Step 7
Return to pot and add more stock. Stir in creme fraiche and the squeeze of lemon juice. Taste and adjust seasoning.
