Instructions

Step 1
Preheat oven to 350°F degrees. Use a silicone muffin pan or line a 12-cup muffin pan with baking cups.
Step 2
Saute onions and peppers in a small amount of olive oil (approx. 1 Tbsp) until soft. Add defrosted and well-drained chopped spinach and cook briefly (1 minute).
Step 3
Remove from the pan and drain any remaining liquid.
Step 4
Combine egg whites and whole egg in a bowl, and add sauteed veggies, olives, herbs, and bacon if desired. Mix well and season with a shake or two of sea salt and fresh ground pepper.
Step 5
Divide mixture evenly among the muffin cups. Bake at 350°F degrees for 20 minutes, until a knife inserted in the center comes out clean.
Step 6
Muffins can be frozen and reheated in the toaster oven. Any combination of veggies can be used.
