Ingredients
4 servings
1 tspoil
1red onion
chopped
1red pepper
deseeded and diced
1green pepper
deseeded and diced
2celery sticks
diced
4garlic cloves
finely chopped
500gveggie mince
1 tsporegano
1bay leaf
1 Tbspground cumin
1 Tbspchipotle paste
200mlred wine
400gtin chopped tomatoes
250mlvegetable stock
400gkidney beans
tin, drained
15gdark chocolate
salt

Instructions
Step 1
Heat oil in large pan
Add onion, celery and peppers
Cook over a low heat for 5 mins until starting to soften Add garlic and mince Turn up the heat and quickly brown the mince
Add oregano, bay, cumin and chipotle and stir until mince and veg are well coated Pour in the red wine and allow it to bubble up and boil off
Add tomatoes and stock
Add the drained beans and season with salt and pepper
Bring to the boil, cover and simmer for 20 mins
Remove the lid and simmer gently for another 10 minutes to thicken Add the chocolate for the last 5 minutes and stir until melted Serve
